Sasha's Egg White Omelette

An Omelette.

Ingredients

Preparation

  1. Separate egg whites from 3 eggs, season with salt and pepper, and set them aside
  2. Finely chop white onion, mushrooms, and tomatoes and season with salt and pepper
  3. Heat pan with avocado oil on medium heat
  4. Cook onions for 1-2 minutes, stirring occasionally
  5. Add mushrooms and cook for 1-2 minutes, stirring occasionally
  6. Add tomatoes and cook for another 1-2 minutes, stirring occasionally
  7. Add baby spinach and stir until wilted
  8. Add egg whites and cook for 1-2 minutes
  9. Right before eggs are fully cooked, add a sprinkle of mozzarella cheese
  10. Fold omelette and enjoy with your favorite hot sauce! (My favorite is Cholula Original)

Sasha's Avocado Toast

Ingredients

Preparation

  1. Place 2 slices of sourdough bread in toaster
  2. Mash up avocado in a bowl
  3. Mix in lemon juice, salt, and pepper
  4. Spread avocado mixture onto toast slices
  5. Cut burrata in half and place each half on a slice
  6. Drizzle olive oil and balsamic vinegar glaze on top
  7. Enjoy with a few slices of bacon and some fruit!
