Sasha's Egg White Omelette
Ingredients
- 3 egg whites
- 1/4 cup white onion, finely chopped
- 1/4 cup baby bella mushrooms, finely chopped
- 1/4 cup cherry tomatoes, finely chopped
- Handful of baby spinach
- Handful of shredded mozzarella cheese
- Salt and pepper
Preparation
- Separate egg whites from 3 eggs, season with salt and pepper, and set them aside
- Finely chop white onion, mushrooms, and tomatoes and season with salt and pepper
- Heat pan with avocado oil on medium heat
- Cook onions for 1-2 minutes, stirring occasionally
- Add mushrooms and cook for 1-2 minutes, stirring occasionally
- Add tomatoes and cook for another 1-2 minutes, stirring occasionally
- Add baby spinach and stir until wilted
- Add egg whites and cook for 1-2 minutes
- Right before eggs are fully cooked, add a sprinkle of mozzarella cheese
- Fold omelette and enjoy with your favorite hot sauce! (My favorite is Cholula Original)
Ingredients
- 2 slices of sourdough bread
- 1 ripe avocado
- 1/2 lemon
- Burrata cheese
- Olive oil
- Balsamic vinegar glaze
- Salt and pepper
Preparation
- Place 2 slices of sourdough bread in toaster
- Mash up avocado in a bowl
- Mix in lemon juice, salt, and pepper
- Spread avocado mixture onto toast slices
- Cut burrata in half and place each half on a slice
- Drizzle olive oil and balsamic vinegar glaze on top
- Enjoy with a few slices of bacon and some fruit!
